Brief History
Shahi Paneer is an Indian dish inspired by a Mughlai dish that is prepared using lots of nuts, fragrant spices, and paneer. The term “Shahi” translates to Royal, and the dish does justice when it brings out the true essence of the name. But when the dish was adopted in Indian cuisine, it was given an Indian twist due to which the flavor and color of the dish differ from the authentic Mughlai dish. You will find this dish in almost every Indian restaurant in India and in the US.
Recipe
Ingredients Required
Sunlight Special Shahi Paneer Sauce
2 cups paneer cubes
3-4 cloves
2-3 cardamom
1 small cinnamon stick
1 Bay leaf
10-15 pieces of cashews (paste)
½ cup fresh cream
2-3 tbsp oil or butter
½ tsp red chili powder
Salt to taste
Cooking Method
Take a pan on the stove, add butter or oil to it and let it heat on medium flame. When the oil gets hot, add whole spices like bay leaf, cloves, cardamom, and cinnamon.
After a minute of sauteing when the spices turn aromatic, add the Shahi Paneer Sauce of Sunlight and pour a cup of water and simmer it on medium heat for 10 minutes. Keep stirring the sauce mixture with a spatula.
When the sauce gets thick and leaves the oil, add cashews paste, red chili powder, and salt for an enhanced taste. Saute the mixture and cook it for the next 2-3 minutes. When the mixture is ready and you get the desired consistency, add the cream and mix well for an even taste and texture.
Toss the paneer cubes into the pan and mix well. Let the mix simmer for 2 minutes so the paneer cubes are soft. Turn off the flame and serve the authentic Shahi paneer into a bowl. Top it off with a tbsp of cream and enjoy.
